Recently, I was dreaming about my favorite raspberry cake that I would alway buy in Munich, Germany. I couldn’t remember the name of this cake, but I could visualize every layer of it. I’ve never seen this cake in America.
The search began. Hours of searching. I truly mean hours. So many raspberry cake recipes out there, but I couldn’t find MY cake.

Finally, I came across this German website, Petit Chef. There was my cake, exactly as I remembered it. It’s called, “Himbeerschnitten.” Only problem, the recipe is in German. That’s OK, luckily the recipe is not very long, so I need to translate it and try to make it. So, THANK YOU, Mr Petit Chef for the recipe!

What’s interesting is that I tried searching, Himbeerschnitten, thinking I would find an English version of the recipe. Well, you can see from search above, I wasn’t successful. This cake comes in many varieties it seems.
Since COVID and our lockdown, different memories have been coming to me. This cake was one of them.
